Blazing Inferno
Island Pepper Sauce

 
   
Description
Blazing Inferno is the pepper sauce of choice for those folks who like things 'blazing hot'. We take Scotch Bonnet peppers, add garlic to make the flavour more interesting - then, just before we close the bottle, we add fire. The result is a hot, tasty pepper sauce that makes you smack your lips and go for more. Use cautiously with your favourite meats or snacks. Crab & Callaloo
Ingredients

2    7oz cans crab meat -drain
1 1/2 lbs spinach (Callaloo) leaves
10 okras
8 cloves garlic
1 large onion
3 tbsp vegetable oil
1/4 tsp MSG (optional)
1 can (box) unsweetened coconut milk

1/2 tsp  Blazing Inferno
1/2 tsp each marjoram, basil, dried thyme
Seasoned salt to taste

Method Wash the callaloo leaves. Remove the heads and
tails from the okras and cut them into cartwheels. Mince the garlic and onion in a blender.
Heat the oil in a saucepan and sauté the onions and garlic for about three minutes or until transparent and limp. Stir in the crab meat, herbs, blazing inferno, seasoned salt and MSG and continue cooking for another three minutes.
Stir in the callaloo and okras, cover and allow to steam for five minutes before adding the coconut milk. Adjust the seasonings to your taste. Cover and simmer until approximately half the liquid has evaporated and the okras begin to mash.
Serve hot on a bed of brown rice with Blazing Inferno to taste.
