Tropical Inferno
Island Pepper Sauce

Tropical Inferno is one of our unique creations. It's made from
Carambola (Star Fruit) which was originally brought to the Caribbean
from Asia. We blend the Carambola with some choice ingredients including
Scotch Bonnet Peppers to create a sauce that will take you to Pepper
Sauce Heaven. Use it as a condiment on just about anything that you wish
to spice up with some real Caribbean Heat or in stews and gravies to
make them sing. |

Chicken & Mango Kebabs
18
pieces chicken breast chunks – approximately 2” square
18 mango fresh mango chunks – approximately 1½” square
¼ cup curry powder
2 tsp hot pepper sauce
1 tsp salt
2 tbsp olive oil
3 tbsp fresh minced cilantro
Basting
Sauce
6 oz. Native Treasures Mango Jam
2 tbsp. Soy Sauce
5 cloves garlic minced
1 tbsp olive oil
¼ tsp salt
½ tsp Native Treasures Tropical Inferno Island Pepper Sauce¼ cup water
Blend all the
above ingredients together.
Rub the
chicken chunks with the oil, curry powder, pepper sauce, salt & cilantro.
Allow the chicken to marinate for 2 hours in the fridge, then thread 6
skewers with 3 pieces each chicken and mango chunks – alternating the
chicken and mango.
Grill over hot
coals or in the broiler basting frequently with the mango sauce for
approximately 12 minutes or until the chicken is fully cooked.
