Description

Coconut trees are very plentiful in the Caribbean. The large green nut filled with water usually grows on tall trees which only the very brave or very stupid dare to climb. Fortunately for the rest of us there are enough of those guys around so all we need to do is to stop by our favourite vendor to purchase the coconuts and drink the refreshing water, When dried the jelly inside the nut hardens. This is removed and grated and the liquid extracted is used to make our distinctive Coconut Jam. A touch of rum is added to enhance the flavour.
